Subject: GOOD RECIPE: Rice Puddling
RECIPE: Baked Rice Pudding
This recipe is TOO good not to share.
4 c. milk1/4 tsp. salt 1/2 c. granulated sugar1/4 tsp. nutmeg 1/2 c. raw rice1 tsp. vanilla extract 2 tsp. butter or margarine
Combine and pour into greased 1-1/2 qt. casserole. Baked uncovered 325° for 2-1/2 hrs stirring frequently.
I used "pumpkin pie spice" rather than nutmeg, and also made tapioca pudding to mix with when done.
Either way, TOO, TOO GOOD! And you could add raisins or nuts or dates.
This is good enough to use as a celebration dish, now or during y2k.
