Subject: Wheat purchase
I have read most of the posts about buying wheat and having it shipped versus buying from a local farmer or elevator...
How does one know which kind of wheat to buy?...Is the proper wheat grown in Indiana or is it the soft variety?
I have a farmer friend who grows all three main crops, wheat, corn and soybeans...The wheat seed he said he uses is Pioneer 2552...Is this the proper kind, or is it useful for anything?....If so, I can get as much as I want from him...otherwise, I will find another source in my various travels this winter....

Alice, did you see the 'all you ever wanted to know about wheat' thread below? There al has described the different types of wheat. another asked how you can tell what the protein and moisture content is, of the wheat your uying. You can't. You must buy from someone who knows, and guarantees, this analysis for you. I have only purchased wheat once from a local 'group'. It was a bad choice, it makes lousy bread. I am saving it for cereal and cookies and such, stuff that doesn't need to rise with yeast. Find an outlet like WALtons, mwntioned on these forums. Go to them and tell them you want whatever you choose from Als list on the other thread. They will gurantee it's analysis for you and you can relax. You will have a good product. Forget the "name" of the wheat, that wont mean much to anyone.
